Anyone else struggle with side dishes in winter?

Summer is easy – salad comes together in a couple of minutes and is great to use up whatever fresh vegetables you have in the fridge.

We all know cauliflower is a keto staple, as are bacon and cheese. Everyone has their own version of a Keto Cauliflower Cheese Bake, and this is the winner in my house.

Enter the ultimate winter side dish (or main!) – Keto Cauliflower Cheese bake.

This makes a regular appearance alongside meat mains, such as my BBQ Pork Ribs, Roasted Pork Belly or just a juicy steak or piece of salmon.

The portions are flexible, if you have extra bacon or extra cheese to be used, add it in.

Some left over odd bits of cheese left in the fridge? Chuck it in!

What I love about this dish is that it isn’t too stodgy and overly cheesy like a lot of Keto Cauliflower Cheese Bakes.

Using sour cream and cream cheese actually gives it a bit of a lighter taste, almost like an alfredo.

If you’ve been looking for something easy to make ahead for the week, this can also be perfect.

 

I have eaten my Keto Cauliflower Cheese Bake for days after preparing – both for dinner and lunch. If you want to amp it up even more, toss in some cooked chicken!

It is also easily doubled or tripled if you are feeding a crowd or want to cook for the whole week.

Cauliflower & Cheese Bake

The perfect keto side dish - loaded full of healthy fats and flavour!

Ingredients

  • 500 grams frozen cauliflower, or one large head chopped into small florets
  • 1 tablespoon olive oil
  • 6 rashers bacon diced
  • 1/2 small onion diced
  • 1 tablespoon crushed garlic
  • 2 tablespoons cream cheese room temperature
  • 3 tablespoons sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup grated tasty cheese

Instructions

  1. Prepare all ingredients as indicated above. Preheat the oven to 200C / 392F and locate a roasting dish of approx 20cm x 20cm. Size isn't too important here. 

  2. Steam the cauliflower in the microwave until soft (see note). 

  3. While the cauliflower is steaming, add the olive oil to a large frying pan and put over medium heat. Add the bacon, onion and crushed garlic and fry until the bacon is just crispy and the onion translucent. 

  4. In a small bowl, mix the cream cheese, sour cream, salt and pepper. Don't be too concerned if there's a few lumps of cream cheese.

  5. Add half the grated cheese to the cream cheese sauce and stir to combine. 

  6. Combine the cauliflower, cooked bacon and cream cheese sauce in your roasting dish and distribute evenly. Sprinkle the remaining 1/2 cup cheese on top. 

  7. Bake in the oven for 10 - 12 minutes until lightly crispy on top. 

Recipe Notes

Steaming Cauliflower in the Microwave:

To do this, I use a large microwave proof container with lid. For frozen cauliflower, it usually takes around 6 -7 minutes. For fresh cauliflower, add a splash of water and microwave on high, usually for 4 - 5 minutes depending on your microwave.

  • Fantastic! Admittedly I did use more sour cream and cream cheese because sauce males me happy, but my 15 year old daughter who isn’t into keto at all loved it, so it’s a winner imho.
    Had it with some lovely medium rare aussie beef (cooked in bacon fat) and a fresh salad…. so good.
