Hands up if you were Paleo before you found keto? I certainly was, but after gaining many kilos on Paleo, I knew something wasn’t right.

I don’t miss Paleo, but I sure miss bliss balls! I have been determined to create keto bliss balls ever since.

The problem with a lot of Paleo bliss balls is that they use dates or honey to help combine the ingredients and add sweetness.

As we’ve learnt on Keto – dates are no good and honey certainly isn’t either. Sugar is sugar after all, and just because it’s ‘natural’ sugar doesn’t change the effect on our bodies.

The key to the Keto diet is reducing carbs, so these bliss balls don’t use any dates or honey or other sugar heavy, carb heavy ingredients!

Ingredients for Keto Bliss Balls – Lemon and Coconut

You will need:

  • Dessicated coconut
  • Brazil nuts
  • Lemon zest
  • Lemon juice
  • Vanilla
  • Xylitol
  • Coconut butter

Substitutions and Ingredient tips

This recipe uses Keto coconut butter.  Because it is solid at room temperature, unlike coconut oil, it helps keep them firm.

Don’t worry though, you don’t need to head out to a fancy health store to spend thousands of dollars on it, you can make it really quickly!

It lasts forever in the pantry and is great to have on hand if you want to up the fats and creaminess of any dish.

You could also use orange zest and juice instead of lemon, which would have a few more carbs but since you’re likely to only eat 1 or 2 balls it is manageable and nice for a change.

Sweetener: I use xylitol for everything on Keto. It doesn’t have a cooling taste, acts like sugar in the kitchen for things like making caramels and isn’t too sweet or have any weird chemical taste.

Brazil nuts: I have chosen to use brazil nuts for these Keto Bliss Balls to try something different. Brazil nuts are one of the lowest carb nuts, and have a host of other health benefits you can read about here.

You could use almonds or a mix of macadamias and almonds as well.

Tips for making Keto Bliss Balls – Lemon and Coconut

Creating these little Keto Energy Balls presented a challenge, as all of the sweet things are the binding ingredients that make your traditional bliss balls so decadent.

Because of the brazil nuts, I found these a little dry on the first day but after a day in the fridge they became more moist and even more lemony (is lemony word? It is now, it’s on the internet!)

If you know bliss balls, you know you need a food processor. I use my thermomix and these are done in 10 minutes and last me all week as a great snack straight out of the fridge.

Instructions:

  1. PROCESS Process all bliss ball ingredients in a food processor until starting to clump together and finely crumbed.  
  2. ROLL THE BALLS Roll with your hands into teaspoon size balls, and then roll into the coconut and lemon zest, pressing in to help it stick. 
  3. REFRIGERATE Refrigerate and best served a day or two later!

Storage tips

  • Fridge : Keep in the fridge in an airtight container – as none of the ingredients spoil quickly, I’ve kept these in the fridge for months before!
  • Freezer: Can also be frozen for up to 3 months – they would probably last even longer since the ingredients are all shelf stable. To be safe though probably 3 – 4 months is a good amount of time to keep these Bliss Balls frozen.

As you will see in the nutrition panel below, this Recipe Name has 3 grams of carbs and 1 grams of fiber per serve, so only 2 gram of net carbs.

Ingredients

Bliss Balls

  • 85 grams dessicated coconut
  • 85 grams brazil nuts
  • 2 tablespoons lemon zest
  • 5 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 1 tablespoon xylitol
  • 1 tablespoon coconut butter

To Roll

  • 4 tablespoons dessicated coconut
  • 1 tablespoon lemon zest
