You will need:

  • chicken thighs
  • head cauliflower
  • spicy chorizo
  • walnuts

Sauce

To Serve

  • lemon
  • rocket
  • greek yoghurt

Substitutions and Ingredient tips

Using walnuts adds an extra textural element to the dish, and serving the tray bake on a bed of fresh rocket gets your greens in and provides some freshness from the rich paprika sauce.

I suggest making the sauce first and then marinating the chicken while you prepare the rest of the dish. If you work quickly, this can be on the table in 40 minutes!

Tips for making Keto Paprika Chicken Thigh Bake

  1. PREHEAT Preheat the oven to 200C / 392F and grease a medium sized baking dish. 
  2. WHISK Whisk together the sauce ingredients in a medium bowl and add the chicken thighs to marinate while you prepare the remaining ingredients. 
  3. SLICE Cut the cauliflower into small florets and slice the chorizo in half lengthways, and then in 1/2 cm pieces. 
  4. TOSS Scatter the cauliflower and chorizo in the bottom of the baking dish, then add the chicken and sauce to the dish and toss all to coat everything with the paprika marinade. Sprinkle the walnuts over the top. 
  5. BAKE Bake for 30 – 35 minutes until the chicken is cooked through. 
  6. SERVE Serve on top of a bed of rocket with fresh lemon wedges and dollops of greek yoghurt.

How many carbs in Keto Paprika Chicken Thigh Bake?

As you will see in the nutrition panel below, this Keto Paprika Chicken Thigh Bake has 15 grams of carbs and 5 grams of fiber per serve, so only 10 gram of net carbs.

Given this would be a main meal for the day, this is a reasonable amount of carbs. If you want to keep very low carbs, say under 20 grams per day, I would introduce this on an already low carb day.
