Thai Keto Fish Cakes

Ingredients

  • 1 95 gram tin of tuna in springwater drained
  • 1 egg
  • 4 tablespoons almond flour
  • 1 tablespoon mayonnaise
  • 2 teaspoons Thai Red Curry Paste
  • 1 tablespoon olive oil or cooking oil of preference

Lime Mayonnaise

  • 2 tablespoons mayonnaise
  • 1/2 tablespoon lime juice
  • 1 teaspoon coriander paste optional

Optional, to serve

  • Spring onion
  • Red chilli
  • Salad leaves

Instructions

  1. Combine all ingredients except olive oil in a small bowl, stirring to incorporate evenly. 

  2. In a large frying pan, heat the oil over medium heat. 

  3. Put tablespoons of the tuna batter into the pan, flattening slightly to make the cakes. 

  4. Cook for 2 - 4 minutes on each side until crispy. 

  5. Meanwhile, combine the mayonnaise ingredients. 

  6. Serve hot with the lime mayonnaise and optionally top with fresh spring onion and red chilli.
