Prepare all ingredients as indicated above. Preheat the oven to 200C / 392F and locate a roasting dish of approx 20cm x 20cm. Size isn't too important here.
Steam the cauliflower in the microwave until soft (see note).
While the cauliflower is steaming, add the olive oil to a large frying pan and put over medium heat. Add the bacon, onion and crushed garlic and fry until the bacon is just crispy and the onion translucent.
In a small bowl, mix the cream cheese, sour cream, salt and pepper. Don't be too concerned if there's a few lumps of cream cheese.
Add half the grated cheese to the cream cheese sauce and stir to combine.
Combine the cauliflower, cooked bacon and cream cheese sauce in your roasting dish and distribute evenly. Sprinkle the remaining 1/2 cup cheese on top.
Bake in the oven for 10 - 12 minutes until lightly crispy on top.
