Keto Berry Coulis

Luxurious, sweet and slightly tart, this Keto Berry Coulis is my go to way to jazz up a regular Keto Dessert! Impressive when guests come over and deceptively simple to make.

Ingredients
  

  • 350 grams mixed berries fresh or frozen
  • 1/4 cup xylitol
  • 1 tbsp lemon juice

Instructions
 

  • Add all ingredients to a small saucepan. If using frozen berries, you can let them defrost or cook from frozen.
  • Put over medium heat on the stovetop and simmer away until the berries are softened.
  • Break up the berries as you go with a fork. Cook for about 10 - 12 mins for fresh berries and 18 - 20 minutes for frozen.
  • Let cool and serve.
    Optionally, strain the seeds and pulp out for a silky smooth sauce. Keep the pulp for muffins, jam or stirring through a cheesecake!
