Keto Berry Coulis
Luxurious, sweet and slightly tart, this Keto Berry Coulis is my go to way to jazz up a regular Keto Dessert! Impressive when guests come over and deceptively simple to make.

- 350 grams mixed berries fresh or frozen
- 1/4 cup xylitol
- 1 tbsp lemon juice
Add all ingredients to a small saucepan. If using frozen berries, you can let them defrost or cook from frozen.
Put over medium heat on the stovetop and simmer away until the berries are softened.
Break up the berries as you go with a fork. Cook for about 10 - 12 mins for fresh berries and 18 - 20 minutes for frozen.
Let cool and serve. Optionally, strain the seeds and pulp out for a silky smooth sauce. Keep the pulp for muffins, jam or stirring through a cheesecake!
