Prepare all ingredients prior to cooking.
Add the salt and pepper to the beef mince and massage thoroughly through the meat with your hands. .
Divide meat mixture into 4 even balls and shape 4 large flat burger patties, as thin as possible as the meat mixture shrinks on cooking.
In a large non-stick frying pan, fry off the bacon until cooked to your liking. Put this to one side, retaining the bacon fat in the pan.
Turn the frying pan up to medium-high heat and add the beef patties. Cook these for approximately 3 ½ minutes on one side and then carefully flip them.
Once flipped, crack your eggs into a medium sized frying pan with a fitted lid. Put this over medium heat and cover. The heat enclosed by the lid will help cook the eggs on top without the need for flipping them.
The burgers will take about 8 – 10 minutes total, so once almost finished, add a slice of cheese to the top of each.
Assemble your burger on top of the lettuce beds and tomato. Drizzle over the tomato sauce or preferred sauce.
