Step-By-Step Instructions To Make Keto Corn Tortillas

Now that you have all the ingredients you require to make this dish on hand, you can finally start cooking!

In this section, we have detailed each of the steps you will need to follow in order to make perfect keto corn tortillas every time.

Let’s do this!

Step 1: Combine Your Dry Ingredients

To start things off, you need to combine your dry ingredients. This should include the following ingredients: almond flour, masa flour, psyllium husk, xantham gum, garlic, cumin, and salt.

Put these ingredients in a food processor and blend everything together for thirty seconds, or until everything has combined and been ground to a fine powder.

Step 2: Combine Your Wet Ingredients

The next step is to combine your wet ingredients in a separate bowl and mix them together. These ingredients should include the following: egg, warm water, and amoretti sweet corn extract.

Once you have mixed these ingredients together, you should add them to the food processor and blend everything together until you have a roughly formed dough ball.

Step 3: Shape Your Dough Into A Disc

Remove the dough from the food processor, take care with the blade, and place the dough on saran wrap that has been sprayed with avocado oil.

Ensure that it is only lightly greased. In the saran wrap, lightly squeeze the dough and create a disc. Put this shaped dough into the refrigerator for about five minutes before moving on to the next step.

Step 4: Get Ready To Roll Your Dough

To get ready for the rolling process, you should get a piece of parchment paper and lay it out over the counter. Under the parchment paper, you should have a damp towel or a silipat mat.

This should stop the parchment paper from moving around while you are trying to roll the dough.

Next, get your saran wrap and spray it with avocado oil. Make sure that you are spraying lightly and that you have a fairly large piece of saran wrap prepared. Set your greased saran wrap aside for later use.

Step 5: Heat Up Your Pan

We recommend using a square griddle pan that is nonstick to cook your tortillas on. Place your pan on the stove and put the heat on medium to medium-high. Allow this pan to heat up while you are rolling your tortillas into shape.

Step 6: Roll Your Dough

Once your dough has rested in the refrigerator, take it out and separate the dough into six to eight smaller balls. Bear in mind that any excess dough will be re-rolled into another tortilla.

Grab one of your smaller dough balls and put it on your parchment paper. Using your fingers, gently flatten the dough until you have a somewhat round disc.

The oiled saran wrap should then be placed on top of the dough disc. Using a rolling pin, flatten the dough until you have a disc that is about ¼ inches thin. Your goal is to make your dough as thin as you can without breaking the dough.

When you have eventually rolled the dough into a thin disc, take the saran wrap off and cut out a circle. You can do this by using a sauté pan or a pot lid. It all depends on how big or small you want your tortillas.

Make sure to keep the excess dough for later. With all the excess, you should be able to make an extra tortilla or two.

Step 7: Cook The Tortillas

You should now spray your hot griddle with avocado oil. Remove your tortilla from the parchment paper and flip it into the lightly oiled and hot pan.

Bear in mind that the tortilla may be slightly sticky at this point. So, do not be afraid to peel it off your hand or the parchment paper.

Each side of your corn tortilla should be cooked for between ten and fifteen seconds. Overcooking them can mean that your tortillas will get brittle, be too dry, and love their pliability.

On top of that, your pan should really be hot so that the tortillas cook enough in this short time.

Step 8: Rinse And Repeat

Continue the process of rolling, cutting to size, and cooking your tortillas. You should do them one at a time. At the end of your rolling process, you should be left with a pile of dough cutoffs. Use them to create additional corn tortillas.

We have managed to get nine tortillas out of this recipe using this idea. You can fry all your tortillas at the same time if you prefer. Additionally, you can make your dough ahead of time if you prefer.

All you need to do is separate your tortilla dough using parchment paper and cover the dough with damp paper towels. You can also store them in an airtight container if you prefer.

Store your dough in the refrigerator and take it out when you are finally ready to make your delicious keto corn tortillas.

Step 9: Enjoy Your Freshly Made Tortillas

Now that you have your tortillas cooked, you can use them as you see fit. Alternatively, you can keep them in the refrigerator in a Ziploc bag. Freezing tortillas is also a good idea if you want to keep your tortillas fresh for longer than five days.

How Do You Store Your Homemade Tortillas?

Now that you have made your tortillas, you might have some leftovers. But what is the best way to store them? We all know how gross it is to eat stale tortillas.

So, how do you keep your tortillas nice and fresh? We recommend storing them properly.

The question is, how do you properly store homemade tortillas? In this section, we are going to go over the three main methods of storage and how to properly utilize them to get the best longevity out of your tortillas.

You Can Try Room Temperature Storage

You can easily store your tortillas on your kitchen counter if you like. Just make sure that they are kept in a cool and dry place.

They should last for a few days using this storage method. If you want to use this storage method, it is essential that you make sure that your tortillas are kept in a bag, or in an airtight container. This should help keep your bread from going stale.

There are a few things that you should keep in mind if you intend on storing your tortillas at room temperature. We have listed the main tips and tricks down below:

  • Store-Bought Tortillas – Tortillas that have been bought at the store should be kept in the packaging they came in. Ensure that your tortillas are kept out of the sunlight and in a cool yet dry place. If any moisture gets into your tortillas, you can quickly ruin them.
  • Air-Tight Containers – If your tortillas are homemade or the packaging rips, you should store them in an airtight container. We recommend using plastic, glass, or even steel. As long as it is airtight, you can use anything.
  • Sealable Bags – You can also keep your homemade tortillas in a sealable bag. This keeps your tortillas out of the fresh air and can help keep them nice and soft. The best options are zip-top bags or seal-top bags. Either way, find a good resealable plastic bag, and your tortillas will stay nice and fresh.
  • Aluminum and Wax Paper – If you do not want to use plastic and do not have any airtight containers on hand, you can always use aluminum foil and wax paper. This is a super easy method to use and only requires you to keep your tortillas in a deep dish that has been lined with wax paper. Then, all you need to do is cover the dish with foil.
  • Tortillas with Other Ingredients – If your tortillas have already been made into burritos, enchiladas, or contain any other foods, you should refrigerate your tortillas for safety.

Storing corn tortillas at room temperature will work for the most part. The main thing that you need to keep in mind is whether your tortillas contain any food-based ingredients. Meat and dairy will go bad faster and be potentially unsafe if it is left out for too long.

You Can Try Refrigeration

If you intend to keep your tortillas for longer, you might want to try refrigeration. They will typically last about two weeks as they are properly stored in the refrigerator.

The low temperature means that there will be fewer bacteria present, which will drastically slow down mold growth.

There are a few tips and tricks you need to bear in mind if you want your homemade tortillas to last longer in the refrigerator. Check out our tips below:

  • Tortillas Last Longer in the Refrigerator – If you have not yet opened your store-bought tortilla packets, storing them in the refrigerator is a great idea. They will stay fresh for longer. You can also keep homemade tortillas in the refrigerator without any issues. Just make sure that they are stored in a zip-seal bag or an airtight container.
  • Plastic Wrap – To avoid moisture getting to your refrigerated tortillas, we recommend wrapping them in a plastic bag. This should keep them fresh for two weeks at least.
  • Airtight Container – A good option for refrigerator storage is an airtight container. Being kept from the air will maintain the softness and freshness of your tortillas.
  • Wax Paper – Using wax paper for refrigerator storage can be a godsend. They can help keep your tortillas from sticking together by keeping a sheet of paper between each tortilla.
  • Alternate Storage Container – If you do not have an airtight container or zip-seal bag that is the right size, you can always use alternate storage methods. For one, you should keep the tortillas on a plate wrapped in cloning film or aluminum foil. Either should keep the tortillas safe from moisture.
  • Check for Mold – Before you use any of your tortillas from the refrigerator, we recommend checking the surface carefully. If there is any mold growth, you should get rid of that tortilla immediately.

Refrigeration may be one of the best methods of storing tortillas but, you should not eat tortillas straight out of the refrigerator. It is highly recommended that your tortillas are heated up first.

On the flip side, you need to take care not to overheat the tortillas, as they can lose their softness and get hard.

To reheat tortillas, keep them on a microwave-safe plate and heat them up in the microwave for about ten seconds.

At the end of this time, check the tortillas by gently pressing them. Test the heat. If they are not at the right temperature, you should heat them up for a further ten seconds.

With twenty seconds of heating up, you should have perfect tortillas. Now do what you will with your delightful warm tortillas. Burritos, pizza, and more. The world is your oyster.

You can Try Freezing

If you want to store your tortillas for several months, you should try freezing them. Ensure that the freezer can freeze at below zero degrees. The low temperatures drastically slow the microorganisms that can be found in various foods.

As such, food will not degrade as quickly. You may have made homemade keto tortillas or bought tortillas from the store, but you can keep them fresh for weeks using this storage method.

This is a great way to store tortillas in advance of events, family get-togethers, or parties.

You should bear in mind that by freezing tortillas, the texture may not be quite the same once they have thawed again. Below, we have a few tips you need to keep in mind if you want to store your keto corn tortillas in the freezer:

  • Sealable Plastic Bag – If you intend on storing tortillas in the freezer, it is imperative that you keep them in a sealable plastic bag. Even better if you have some parchment paper between each of the tortillas to keep them separate. This will make your life much easier down the road!
  • Airtight Container – If you do not have freezer-safe plastic bags for your tortillas, you can also use an airtight container. Once again, keep wax paper between them so that they do not stick together.
  • Cardboard – For those of you that do not have either a plastic bag or container that is suitable, you can always use cardboard. All you need to do is keep the cardboard flat and a piece on the top and bottom of the container. Use clingfilm to seal everything in and keep the tortillas safe from freezer burn.
  • Microwave Reheating – If you intend on reheating your frozen tortillas, you should put them in the microwave and defrost them for about thirty seconds. If they have not thoroughly thawed, you should put them back in for a further ten seconds. At this point, they should be fully heated through.
  • Skillet Reheating – You can warm up tortillas by using a skillet. Simply warm up one side before switching to the other. Take care that your corn tortillas do not burn while you are using this method of reheating. It is easy to do and can ruin the flavor of your tortillas.

With that, you should have your tortillas perfectly frozen and safe from rot. This is a great method if you need to keep your tortillas fresh for longer periods of time.

However, you need to be careful as the texture can change by using this method.

While it might seem like a good idea to swap almond flour for coconut flour, it actually does not work out very well a lot of the time. In a lot of cooking, you will find that swapping these flours does not usually go well.

Almond flour is not as absorbent as coconut flour. As such, if you want to use coconut flour, you should use more liquid.

As such, we highly recommend using it in recipes that call for either or both of these ingredients.

How Do You Add A Corn-Like Flavor To Keto Corn Tortillas?

Ketogenic corn tortillas are not actually made using corn flour, as this is not considered to be a keto-friendly ingredient. As such, these tortillas do not particularly have a corn-like flavor.
