Anyone that knows me, knows I love the slow cooker.
It is the ultimate quick-yet-slow way to prepare dinner.
With a little bit of preparation in the morning you come home to an almost complete dinner.
Ingredients for Keto Lamb Shanks Slow Cooked
A slow cooked, hearty dinner perfect for feeding guests or a hungry family with minimal time in the kitchen. These Keto Lamb Shanks are melt in your mouth flavour.
You will need:
Lamb Shank
- Lamb Shanks
- Carrots
- Celery
- Chicken stock
- Rosemary
- Tomato
- Bay leaves
- Dried oregano
- Brown onion
- Salt
- Pepper
- Olive oil
Cauliflower Mash
- Cauliflower
- Salted butter
- Heavy cream
- Salt and pepper
You’ll see the use of carrot and onion in the slow cooker here.
Up to you whether you eat them or not – I feed them to the non-keto eaters who are eating with me.
For the chicken stock, I always have a container of Skinnymixers Stock Concentrate in the fridge – instant chicken stock whenever you need it.
By having this concentrate on hand, you can add a teaspoon to just about any savoury dish to really add a wow factor to the flavour profile.
You don’t need a Thermomix to make it, you can cook everything up and use any food processor or blender once cool enough.
Alternatively, just use some good quality chicken stock from the super market, or bone broth!
Substitutions and Ingredient tips
I would suggest doing half the cauliflower mash but you can keep the liquid levels the same and just have more sauce.
Lastly, these Keto Lamb Shanks had the bone cut short by the butcher, so I could fit more into my slow cooker.
You can of course do the traditional long bone shanks that look pretty, but once you taste these lamb shanks you won’t care about a bone one bit.
Some people avoid eating cauliflower and beans because they are higher in carb than some other veg.
For me, variety is key to a successful long term eating style, so I say eat up.
As always, using the highest quality ingredients is super important. With a simple recipe like this Keto Lamb Shanks, the quality of the ingredients is what makes it delicious.

Tips for making Keto Lamb Shanks Slow Cooked
For a lot of my keto slow cooker meals, including these Keto lamb shanks, I use red wine.
I would strongly recommend you do the same, because it adds such a rich and hearty depth of flavour.
Plus, then you’ve got an open bottle of red wine, and I am all for minimising food waste.
So you better have a glass.
Yep, I do my bit for the environment, one glass of wine at a time.
Seriously though don’t waste food.
Here’s the step-by-step cooking instruction for Keto Lamb Shanks Slow Cooked
- Prepare in the morning, allowing 8 hours of cooking time. Chop the carrot, celery and onion as above.
- In a large frying pan, heat the olive oil over medium heat and brown the lamb shanks on all sides, seasoning with salt and pepper as you go. Put to one side.
- Fry the chopped vegetables and saute for 5 minutes, scraping any meaty bits from the bottom of the frying pan. Put the vegetables on the bottom of the slow cooker.
- Add the red wine to the frying pan and bring to a boil, again scraping any scraps from the bottom of the pan so you get all of the flavour into the wine. Let simmer for 1 minute and add to the slow cooker.
- Add the spices, tin of tomatoes and chicken stock to the slow cooker bowl and stir thoroughly to combine. Place the browned lamb shanks on top of the sauce and spoon the sauce over the top.
To serve:
- Cut the cauliflower into small florets and steam. I usually use a microwave safe container with a splash of water, and steam until completely soft and falling apart.
In my microwave, this is usually about 7 – 9 minutes. You may need to do in 2 batches if you are serving all 6 servings.
Once falling apart, blend the cauliflower with cubed butter, salt and pepper. Depending on the water content of your cauliflower, you can add the cream to help blend it. The cream will make it more of a smooth consistency. - While the cauliflower is steaming, prepare the green beans. In a frying pan, saute with the olive oil, garlic and salt and pepper until cooked to your liking. I enjoy them with plenty of crunch!
- Alternatively you can steam the beans in the microwave for 90 seconds and toss with olive oil and garlic.
- Serve the lamb shanks over the cauliflower mash with beans, and pour in some of the slow cooker pan juices.

Storage tips
- Fridge: Leftovers will last for up to four days in the fridge, stored in an airtight container. Reheat slowly in the microwave on 50% power, and stir halfway through the heating process.
- Freezer: I recommend cooking four servings and freezing the rest because this recipe is perfect to freeze. This recipe gets better with age, so leftover food will taste even better the next day.

- 300 grams green beans, ends trimmed
- 1 tablespoon olive oil
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon crushed garlic
Instructions
